Once in awhile, you taste a wine that really resonates with your palate. Zinfusion from Castoro Cellars did it for me. I had heard good things about this winery, and was looking forward to the opportunity to taste one of their wines. I was not disappointed.
Located in Paso Robles, California, Castoro is a family-run establishment. Founded in 1983 by husband and wife Niels and Bimmer Udsen, Castoro is the Italian name for 'Beaver' which happens to be the long-running nickname for Niels - and thus their tagline and motto, "Dam Fine Wine."
This bottle of Zinfusion had a beautiful deep ruby red color in the glass. The nose was vibrant with red berries and a touch of spice. On the palate, there were bursts of flavor with juicy fruit and mild acidity. The finish was very satisfying with soft tannins and a spicy peppery finish.
We paired this Zinfandel wine with grilled pork loin with coated with roasted sesame seeds and a touch of sriracha sauce, served with garlic mashed potatoes and fresh asparagus salad.
If you're a Zinfandel-lover (or if you're interested in to learning more about Zins), this "Dam Fine Wine" will hit all the high notes and leave you wishing you had more.
